Preparation

  1. Place all dry ingredients, except the malunggay flakes, into the stand mixer bowl: bread flour, salt, milk powder, sugar, Tradizy® Durum, and Magimix® Green Bread Improver.
  2. Mix on low speed for 30 seconds to combine the ingredients evenly.
  3. Add the water and continue mixing on low speed for 5 minutes until a rough dough forms.
  4. Add the shortening and switch to high speed. Mix for another 5 minutes, or until the dough becomes smooth, elastic, and slightly glossy.
  5. Incorporate the malunggay flakes and mix just until evenly distributed throughout the dough.
  6. Transfer the dough into a pre-greased container, cover it, and let it rest for 30 minutes at room temperature to relax the gluten and develop structure.

Shaping

  1. Punch down the rested dough to release trapped air, then transfer it onto a lightly greased work surface.
  2. Divide the dough into 30g portions and round each piece into a smooth ball.
  3. Flatten each dough ball gently and place 10g of cottage cheese and a portion of salted egg in the center.
  4. Fold the edges inward and pinch to seal the filling completely, ensuring no gaps remain.
  5. Roll each filled dough in breadcrumbs until fully coated, then arrange them evenly on a prepared tray.
  6. Proof the dough at 30°C for 45 to 60 minutes, or until doubled in size and light to the touch.

Baking

  1. Preheat the oven to 170°C.
  2. Bake the proofed dough for about 20 minutes, or until the surface turns golden brown and the aroma becomes rich and buttery.
  3. Remove from the oven and transfer the baked pieces to a wire rack.
  4. Allow them to cool completely before serving to preserve their soft interior and delicate texture.
