PROCESS

  1. Place all dry ingredients (except the malunggay flakes) into the stand mixer bowl; bread flour, salt, milk powder, sugar, Tradizy® Durum and Magimix® Green Bread Improver.
  2. Mix on low speed for 30 seconds to combine.
  3. Add the water and continue mixing on low speed for 5 minutes.
  4. Add the shortening and mix on high speed for 5 minutes, until the dough becomes smooth and elastic.
  5. Add the malunggay flakes and mix until evenly incorporated.
  6. Transfer the dough into a pre-greased container, cover it, and let it rest for 30 minutes at room temperature.
  7. Punch down the dough to release air, then transfer it onto a pre-greased table.
  8. Divide the dough into 30g portions, then round and smoothen each piece.
  9. Place 10g of cottage cheese and salted egg in the center of each portion.
  10. Fold the sides of the dough to seal the filling completely.
  11. Roll each filled dough in breadcrumbs and arrange them neatly on a tray.
  12. Proof at 30°C for 45–60 minutes, or until doubled in size.
  13. Preheat the oven to 170°C and bake for 20 minutes, or until golden brown.
  14. Remove from the oven and let them cool on a wire rack before serving.
