Tradizy Wholemeal Bread

INGREDIENTS

Wholemeal flour	150g
Water	175g
Livendo Tradizy	10g

Wheat flour	350g
Tradizy Poolish	335g
Water	110g
Sugar	5g
Salt	7g
Honey	25g
Butter	25g
Livendo Tradizy	10g

Preparation

In a mixing bowl, combine all ingredients except the fat.

Using a spiral mixer, mix on low speed for 4 minutes and high speed for 2 minutes, or until the dough is 80% developed.

Add the fat and continue mixing on low speed for 2 minutes, or until fully incorporated.

Transfer the dough to a lightly floured surface and let it rest for 5 minutes.

Shaping

Flatten the dough and divide it into 17 equal pieces, each weighing 100g.

Roll each piece into an oblong shape.

Arrange the dough pieces on a lined baking tray and proof at 30°C for 180 minutes, or until well-risen.

Baking

Preheat the oven to 200°C.

Apply steam before baking to achieve a soft crust.

Bake for about 18 minutes, or until golden brown.

Transfer to a wire rack and allow to cool before serving.
